Blog Hop Tuesday: Remembering 9/11

2001 was not a good year of my life. It started out with my small family (me, my husband, and Mia who was 2) having to move back in with my parents. Also living with my parents at the time where my little brother, little sister, my grandma and my uncle. My parents' house has only 4 bedrooms so me, my husband and Mia had to share a room. It was a very cramped house.

Shortly after we moved in I found out I was pregnant (the only good thing that came out of that year). A few months later, in April, my husband was in a terrible 4-wheeler accident. It nearly killed him. He was out of work for over 4 months (turns out it was a blessing that we had to move in with my parents).

In September, just a month away from the baby being born, my husband was finally able to return to work. I was put on semi bed rest so I was still in bed when he called me that morning. I turned on the TV and was watching what had happened. I was horrified by what I saw but I didn't fully understand at the time how it would affect our lives. Later as the days went by and the full story hit home I felt grateful to have my whole family under one roof. My problems of the past year seemed insignificant. We were together, we had each other, that was all that mattered. I remember feeling so small and helpless as massive efforts were made to help those in need while I was stuck in bed watching it all. I finally had to stop watching TV because that was all that was on and every time I saw anything about it I cried. My heart went out to those looking for their loved ones because a few months earlier I came close to knowing what it feels like to lose a loved one. As the country was pulling itself back together the sense of pride was contagious. That was the first time in my life (I was 22 at the time) that I understood what the American spirit was all about. I saw how humanity could stop thinking about itself and reach out to help others. It is tragic that 9/11 ever happened but how we came together afterwards is what makes me proud to be an American and I will never forget.

Blog Hop Tuesday: Time To Laugh

This week's Blog Hop theme is "TIME TO LAUGH". We are supposed to post either our favorite joke, cartoon, funny picture or video. We all need a good laugh sometimes, what a great way to start the week..

I saw this video several months ago and I know that I wanted to create a post about it. Every time I see it, it makes me laugh. Sometimes I wish life was a musical.





What would your reaction be if you were in a public place and everyone around you started dancing in unison. I can not imagine the effort it took to organize this.

Blog Hop Tuesday: Favorite Recipe

Cheese and Chicken Enchiladas

Ingredients

1 sm onion, chopped

1 1/2 cups cooked, shredded chicken breast

3/4 cups shredded cheddar cheese, (divided)

16 oz salsa (divided)

4 oz cream cheese

8 flour tortillas


Directions

Preheat oven to 350°. Spray large nonstick skillet with cooking spray. Add onion; cook over medium-high heat for 4-5 minutes or until tender. Add chicken, 1/2 cup cheddar cheese, 3/4 cup salsa, and cream cheese. Heat and stir for 2-3 minutes or until cheeses are melted. Spoon 1/3 cup chicken mixture down center of each tortilla; roll up. Place in 13x9 inch baking dish; drizzle with remaining salsa. Sprinkle with remaining cheddar cheese; cover. Bake for 15 minutes or until heated through and cheese on top is melted.

Blog Hop Tuesday: Favorite Photo of Kids

I have several pictures of my kids that are favorites of mine. You can see some here. Here is another of one of my favorites and it is the one that I have set as my desktop wallpaper.



I don’t know why l love this picture so much. It was very impromptu. They were all playing when I gathered them in. If you look closely they are all armed. Mia (far left) has her toy bow and arrow beside her. Zoe (far right) has a toy gun in her hand. Lea (beside Zoe) has a toy pirate sword in her hand. Ali (beside Mia) I think was the bait to lure you in with her charm. I didn’t realize this until after the picture was taken. Makes you think what exactly what were they playing before I gathered them in?

Blog Hop Tuesday: Favorite Recipe or Dish


Cream Cheese Clouds

What You Need
1 can (16.3 oz.) refrigerated buttermilk biscuits
1/2 cup sugar
1 Tbsp. ground cinnamon
1 pkg. (8 oz.) Cream Cheese, cut into 12 cubes
1/4 cup (1/2 stick) butter, melted

Make It
PREHEAT oven to 350°F. Separate dough into 12 biscuits; press or roll each to 1/4-inch thickness.
MIX sugar and cinnamon in shallow dish. Dip cream cheese cubes in melted butter, then roll in the cinnamon sugar. Place 1 cheese cube in center of each dough circle; gather up sides of dough to enclose filling. Press edges of dough together to seal. Place, seam sides up, in lightly greased muffin pan. Drizzle with any remaining butter; sprinkle with any remaining cinnamon sugar.
BAKE 15 minutes or until golden brown. Serve warm
